Environment variables for TEMP

What should be entered as a user variable and/or system variable to move the
%USERPROFILE%\Local Settings\Temp and %System Root%/Temp folders to Z:/Temp?

Z: is a extended partition on my boot drive used for temporary internet
files and cache files.

Can both of these folders point to a single folder? Or should Z:\Local
Settings\Temp and Z:\Temp be created.

The goal is simple - to keep the temporary files out of the same partition
where the OS and programs are installed.

You can enter Z:\temp for all temporary folders. Make sure to use
backslashes, not forward slashes as in parts of your post.
