Hello.
In Outlook 2003 I have created a public folder and in this a form, called
'riverway'. I sign in to Outlook and go to the public folders and select
'riverway'. I get a message to say 'there are no items...etc'. I do a right
click and select 'Show fields'. A box comes up in to focus and from this box
I select riverway' from the menu 'Select available fields from' menu on the
bottom left of this box. I wish to delete one of the 'Available Fields'
items, but the 'Delete button is grey'd out,.

How can I un-gray this and delete what I want?'

Did you actually add the Riverway form's fields to the folder? If not, then they're not there in the folder for you to be able to delete. They're defined only in the form itself.

Why do you want to delete them, anyway?
