EML filetypes

I have a bunch of saved emails that use the *.eml extension. I tried
to open one with Outlook, but it wouldn't work. I'd like the Option
to save individual emails, too, but can't seem to do it. Our office
saves individual emails into their respective client folders. What
are we doing wrong?

*.EML files are generally opened by Outlook Express (or Windows Mail if
running Vista) and not Microsoft Outlook. If Outlook Express isn't
available, the items can be opened in Notepad.

Is there a way to redefine the *eml filetype so that it opens with
Outlook?

No. Drag them into an Outlook Express folder, then export the folder to
Outlook.
