Email headers shwoing in between email message text

Hi I have an issue where some emails are getting the headers stuck in the
middle of the email message text. Both users are using Outlook and are part
of the same domain, although 1 is on the east coast and one on the west.
below is an example of what these users are seeing. It happens randomly, and
not always to the same users, but I can't figure out why it is happening

Generally we shouldn't accept people for more than 3 months in the beginning
because it may not work out; could be a problem intern, etc. I've also found
that most people are ready to go home after 3 months, even if they originally
wanted to stay longer; they are home sick, they miss their friends, family,
companion animals, etc. In the end however, it is the prerogative of the
department, and if they really really want to sign someone up for

The only time I have ever seen the headers end up in the body of an e-mail
is when the encoding type is set to User Defined. From the sample below,
this doesn't look to be the case.
