Email addressee "aliases"

For the life of me, I cannot fighue out how to change the addressee visible
name. Here's the problem:
In my address book I have the name of Joe Smith, with an email addrss of
(e-mail address removed). I would like to see the on the message that it
is sent to Joe Smith. However, when I type Joe Smith in the "To" address,
the email and only the email addreess shows. In the address card, I have Joe
as First Name, Smith as Last Name and Display set to Joe Smith. Who do I get
the actual message to show Joe Smith and not the email address?

What I suspect you're seeing is an address you have stored in the
autocompletion cache. INstead of typing in the To field, click To, find
the entry for Joe Smith, select it, and cclick To. DOes it show it by
Display As then?
 
Following your advice, by clicking "To" and clicking on the name, the
Display name appears properly. I looked for auto completion, but did not
find any reference. What I described in my preior message happens with
other addressees as well. How do I correct this?
