I would like to create something so my users can type in a policy number and
have a form pop up with the information specific to that policy. I need them
to be able to then edit the information in that form. For example, Policy
Number 999 needs to have the Sex of the Policyholder changed from Male to
Female. I need to user to be able to type that policy number into a box and
have the policy information come up for the "Male" to be changed to "Female."

In its simplest form you can do that with Filter by Selection. Right-click
on the policy number and choose Filter By Selection. Type in the number and
hit the Enter key. Done!

Have you tried the combo box wizard? The option to "Find a record ... "
should do the trick if you place the combo box on the form you intend to
use.
