E.mail Addresses

I have three addresses and former one always on the top when sending mail.
How can I alter this please.

When you compose a new email, the From address will be from the default
account (unless you change it).
You can also change which account is the default: Tools, Accounts, select
the account you want to be the default, click "Set as Default".
