Depending on who I make a project for I have to burn in either plus or minus
format so their dvd player will play the project.
What type of format do commerical dvd's use? since they seem to play in any
player----thank's------john

Commercial DVDs do not use a "format". They are pressed (literally) at the
factory.
The difference between the + and - discs is the way the lead-in and lead-out
are written.
This is only important on consumer level writers.
Since commercially produced discs are stamped, and not burned with a laser,
they are not
either + or -.

You can't...you simply choose a format and burn it. I have read statements
to the effect that -R has more compatibility, particularly with older
machines, but using either format will not guarantee that all of your
recipients will be able to read a disc.

I would suggest keeping a log of which recipients need -r, and which need
+r. You'll have to burn for the audience.
