Depends what you want to run.
I've always run a dual capable card, other people run quad capable cards
It can be difficult to get two cards to coixist, but this also depends on
your mobo and the cards.
A dual head card is supplied with software that makes to screens workable in
a variety of ways.. there is software available from 3rd parties that will
do this, assuming that you can get two video cards to play in the same ball
park.. personally, the dual head card is a better choice..

The single card will be cheaper, and they usually work fine.
Unless you want to drive 3 or 4 or more monitors, the single cards to
do THAT are spendy. Thats the situation where you want multiple cards.
