Dual Channel Memory

Can anyone explain to me what the difference between dual
channel memory and two sticks of identical memory is and
what if any benefits one has over the other please? My
motherboard supports dual channel but I dont have the
memory (2 x 512 ddr 400) configured this way.Would it be
worth altering the memory configuration?
