I am trying to look for specialist software, that can recover files
that have been deleted even from the recycle bin. Before windows, in
the age of DOS, Norton came to the rescue here with software such a
quick unease. But know we are using windows, this does not work. Large
disc space NTFS etc.

If anyone knows of any suitable software that can help. This will have
to be windows orientated. And obviously installed on a hard disk that
does not have the information to be recovered.

Ontrack's EasyRecovery - http://www.ontrack.com/software/
R-Studio - http://www.r-tt.com/

When all else fails, I like Drive Savers for professional data recovery.

After you have recovered your files using one of the tools
listed by the other respondents, you may want to
consider the standard method to protect yourself against
your double mistake (deleting the file, then emptying the
wastebasket): To back up your important files to an
independent medium at regular intervals, e.g. once a
week. A 2.5" disk in an external USB case costs very
little and is a highly effective backup medium.
