Is there any way to send messages via a distribution list whereby each
recipient only sees their own name and e-mail address on the "To" line,
without seeing the names and addresses of everyone else on the list?

No. But you can certainly put the DL in the Bcc field. You can also use
Mail Merge to send messages individually to each person.
