Displays too much info in "to" window. Don't want email address

With our new Vista system, whenever a new email is created, the "to" window
also includes the email address as well as the recipients name. In OE, there
was a box that you could use for "display". I don't see that in WM. All I
want is the recipients name

If you take away the address, the message won't arrive. OE gave you
the option to hide it, WM does not. When it arrives, whether it's visible
depends on the recipient's software, not yours.
