I've got a discussion board at
http://www.daystarranch.com/saleboard/index.html and would like to have
something other than ARTICLE ... is there way to change this to either ADD
or leave it off entirely OR better yet show what they are actually posting?

You have modified the field name for Subject (or deleted the Subject field) from you Post form, so P is apply a default field value
In Form Properties Check your field names saved vs. the form filed names
- Subject as a field name is required and is use as the link title for the posts
