Disable the ability to edit recipient and sender information

I had a user who sent himself an email, then edited the 'To' and 'From'
fields in the reply and sent it to another user, making it appear that the
original message was sent from her. All he had to do was open the message,
right click on the To/From info and select 'edit message'. There has got to
be a way to disable editing text in a forwarded or replied to message, right?
We're using Office 2000 and Office XP.

No, there doesn't. That's part of the nature of email -- that it is subject
to all kinds of potential spoofs.
