is there any way to get the spell check to spell check in UK English not US
English? I only seem to have one option on the drop down menu - English

Not in Windows Mail there isn't. If you are using Windows Live Mail then it
can be done, but not with the standard windows mail supplied with Vista.

The link below refers to Windows Live Mail only, it does not work on the
Windows Mail that comes with Vista:

It would be great if Microsoft acknowledged the rest of the world, wouldn't
it. It really winds me up when Windows Mail declares I've spelled something
wrong when I haven't. Can't we do something about it?

The drawback to that approach is that when "color" is typed,
it will not be flagged as an error.
