Desktop & My Documents redirect on P2P XP

I know I can change the path where Windows put My Documents, but can I do
the same with the Desktop, especially on a Peer to Peer network? With
Windows Server I can manage folder redirect with Group Policy, but i wonder
if I can do this in a P2P situation.
Also, has anyone done Folder Redirect to a Peer Server? I have a small
office of 4 architects and a part time accountant, with a decent Dell server
machine running WindowsXP as a dedicated Peer Server. I am thinking I would
like to put everyone's Desktop, My Documents and outlook PST on the Peer
Server so it is backing up. Or is the better answer to have a script copy
that stuff to the server after hours? Any suggestions on best practice would
be greatly appreciated.

Alter the path for "Desktop" here:
[HKCU\Software\Microsoft\Windows\CurrentVersion\Explorer\User Shell Folders]
Example: Set "Desktop" to "Z:\Username\Desktop"

-and-

[HKLM\SOFTWARE\Microsoft\Windows\CurrentVersion\Explorer\User Shell Folders]
Example: Set "Common Desktop" to "Z:\All Users\Desktop"

Would it be possible to have the entire 'user' folder relocated from the
default ...\Documents and Settings\ subdirectory to another location entirely
- such as another parition?
