Is there a way to get more than two lines of text to consistantly display
below the icons on the Desktop?

Not really, however, if you go onto the 'Appearance' tab in the 'Display'
control panel item, and re-set the size for icons ('Advanced' button - icon
size, but especially, icon spacing) you would probably see more of the text
(if it's quite long), under the icons...
