I have deleted a contact from my address book, however when I press the new
email button, the contact I deleted from my address book keeps coming up. Help

Outlook does not have an address book. Nor should you ever use the address
view of your Contacts to edit your data. State more clearly and more
accurately what you did. Include your Outlook version.

Deleting a Contact does not take their name out of the cache of recently
used names. To remove their name from that cache, make it appear in the
to... field, then use the down arrow to highlight it and the delete button
to delete it.
