Deleted Mail

Perhaps because you are sorting in that folder by some other column. Click a
column header to sort by that criterium. Click again to reverse the sort.

Why should you worry? Deleted mail is just that, deleted. Are you using
the "Deleted Items" folder to actually STORE mail?
 
I delete all the junk mail and also ones I've read. Sometimes I have to go
back to an old email to see what they wrote and I have to look thru all
emails to find it.
I know I can make folders to keep them separate but usually deleted mails
are not important.
Also, is there a way to delete mails to a folder automatically (eliminating
the other step)?

There is a search function in outlook you know. Have you tried that?
