Defined Names for E-mails

Hi,

How do I customize Outlook so that instead of typing the full E-mail address
of the person I am sending a message to, I only need to type a defined name
for them?

e.g.

person with E-mail address

(e-mail address removed)

I want to type, in the "To" Bar, only "Joe", and Outlook will know to send
it to the E-mail address (e-mail address removed).

Can you give me step-by-step instructions please.

I'm using Outlook 2000.
