I'm running in a live network, with 3 domain controllers, one of which i
want to take offline. If all FSMO roles are transfered off this server,
will it do any harm if i demote it to a member server, then take it offline,
why the network is up and running live?

This is the perferred method of removing a DC. Otherwise you can have a DC
that you will need to remove from your AD using a sledge hammer approach
(NTDSUTIL).
