There's probably a simple answer to this, but it is eluding me:
I'm using 12:00 as a time listing in a column - so that excel lists in time
order, otherwise 12:00 comes after 1:00. However, when I fill down a column
it automatically adjusts by one hour every subsequent entry to the original.
What am I missing?

When you fill down excel assumes that you want an increasing series. Try
using the right mouse buuton instead of the left as you fill down. You will
get a menu asking what you want to do and will be able to choose to 'copy
cells'.
