when i insert date from header and footer it always appears with the
month/day/year format and I have my regional settings set to day/month/year
as I am from NZ I dont want month to appear first. Date is inserted
correctly in excel but not word, how can I fix this to make the
day/month/year my default

When you use that button or the Alt+Shift+D keyboard shortcut, you get the
date format you have selected as the default in the Insert | Date and Time
dialog. If the date format you need is not available in that dialog, you can
make it available by setting it as your default short/long date format in
Control Panel | Regional Options.

Try inserting a date field where you want it in your template in the format
you want. See http://addbalance.com/word/datefields1.htm for information on
the different kinds of datefields and how to format them.
