Sometimes when I use CTL-K to paste a document into the
body of an outlook email. It automatically sends the
email (doesn't attach the file though.)

Has this ever happened to anyone else? It's really
frustrating because sometimes you just don't want that
email to go. Anyone experience the problem?

I've never tried it, so I can't say for sure. If you use edit | paste do you
get the same results?
Note that one thing I usually do is not enter the recipient's address in a
message til I'm ready to hit send - it's saved me a lot of embarrassment
more than once. ;-)

I thought CTL-K was Check Names shortcut and CTL-V was Paste shortcut.

Depends on whether Word is being used as the mail editor or not. In Word,
CTRL-K means something other than it does in the Outlook editor, or so I
believe I read somewhere.
