Create new PST file

Is it possible to create a new PST file for myself and then have that
in a location where I want it.

i.e C:\DATA\OUTLOOK2003

Make's it easier to backup a folder called C:\DATA ..

Yes. You can use the File > New > Outlook Data File to create the PST file
in the desired location. From there you can select Tools > Email Accounts >
View/Change an existing account to change the default delivery location to
the new PST file. Restart Outlook and then close the old PST (right click
on Personal Folders in the folder tree and select Close), close Outlook, and
then move the old pst file as well.
