Counting field entries

I have a client that is giving a conference in which the
participants registered for via the 'Net. The conference
consists of several workshops and the client wants to
easily get a count for each Workshop.

I would like to:

a) Get a count from each workshop column in the table

b) Add buttons to a form assigned to each workshop that
would display the count in a text box or ideally,

c) Create a single combo box from which the workshop can
be selected and the count displayed in a text box

I can create each individual component, but I can't seem
to make them work together. I need help.

What is the structure of the table that is storing this information?
