converting to word that can be edited

I have a couple of questions
1/ I have paper copies of documents that need updating and to do so from
sctatch would take an age.Is there any way of scanning them as an image then
converting into a word document. I have tried the following-
scanned to jpeg/ converted from jpeg to pdf using Image2pdf v1.8/converted
from pdf to word using able2extract Pro and PDF2WORD v 1.6 which doesn't work.
Any suggestions / advice would be great .

2/I have a few large pdf files (approx 40 pages each) that I have converted
to word successfully using able2extract pro but I am having problems with one
file it is 42 pages long and when I try to convert it only the first 2 pages
will convert. If I try to convert these pages seperately it states there is
no text on these pages even though I can see it. Any Ideas ??

PDF2Word will only work if the PDF file contains text. If it was created
from a jpg image it won't do anything. What you need is OCR software. Be
aware that OCR software will produce a file that will require editing to get
it to resemble the original document before you can even think about making
changes.

Thanks for your reply it helped in as much as it confirmed what I thought.
I've solved the problem with the paper copy docs . finereader 8.0 pro scans
reads and converts to editable word , I'd recommend anyone to try it.

I would agree with your choice of Finereader. OCR doesn't currently get any
better than that.
