I've created type in forms in Word, but when I convert them into pdf I can no
longer type into them. What am I doing wrong? I am using WORD 2003 and
Acrobat 5.

You have to use Acrobat to add text to a .pdf file, not Word.

Can you briefly explain how I would do that? Thank you.

You said you have Acrobat, haven't you ever used it?

You need to add form fields to your PDF file from the advanced editing
toolbar of Acrobat. Acrobat documents form fields fully in its help file.
