Contact - multiple birthdays

I want to enter both my client's and spouse's birthday in the contact so that
I can see both on my calendar. How do I do that

You'd have to either enter multiple contacts, or enter the spouse's birthday
manually.

Did you somehow select an option to notify you when the thread changed? You
obviously read the newsgroup via the Microsoft-cupplied web interface. I'm
not familiar with that interface, since I use a real newsreader, so maybe
you can check if there's such an option.
