I have a color blind professor that wants to have just the Status Bar color
scheme changed so that he can read it. Going into Display Properties,
selecting the Appearance tab, and then selecting the Advanced option does not
offer him an desirable option for changing the status Bar’s color scheme.

You won't be able to change just the Word status bar, but you may want to try applying one of the Windows classic themes, through
the Accessibility options in the Windows control panel and adjusting the font sizes for menus in the Display/Appearance area.
