I recently purchased a new motherboard. Is it possible for me to
change the SATA drivers that Windows uses to load up XP, or do I have
to re-install EVERYTHING?

Changing motherboards is considered a "major" hardware change. You
might be able to do a repair re-install of XP onto of the "installed"
version. You must be able to provide the SATA drivers, by floppy
disk, during the XP install CD boot.

A better solution is to re-install everything. This way you clean out
all the "crap" drivers that would be "left-overs" from the old
motherboard.

Please note: Offically, you can not reinstall any OEM versions XP
onto the PC with the new motherboard. OEM licenses are tied "forever"
to the first motherboard that it gets installed with. Since the old
motherboard is being replaced, you must replace every OEM version of
any software.
