Changing ownership of folders

We are replacing an employee and want to keep the former employee's mailbox
intact. In order for the new employee to view her mail under his login you
have to go to each folder and grant him access. Unfortunately there are over
200 folders and sub-folders under those.

Is there any way to globally grant ownership of all folders, contacts,
calendar entries, etc?

Yes, through Exchange. Either merge the mailboxes or grant him full mailbox
permissions through AD U&C.
