changing letter wizard default settings

Is there a way to set up a default for letter wizard so it always types in
Arial font, always puts the date etc.
 
Yes, you can edit the template and modify the styles in the template to get
the font you want. If you are using Office 2003 and creating a new letter
with the standard templates, these templates are located on your local hard
drive in Program Files\Microsoft Office\Templates\1033.

For automatic dating, insert a date field (CreateDate or Date) via Insert >
Field.

Once you have made the changes you want, either Save or Save As (which is
probably better, since this will be YOUR template) and you should have a
letter template to your liking.
