Changing existing ownership of XP and Office

What needs to be done in order to change the listed
ownership of the OS and subsequent applications. I
inherited a laptop from a former employee of this
company. All the applications list his name as owner and
some directories as well. When I try to change a folder
with his name, it won't allow it. Is there something in
the registry that I can change that will list myself as
the new owner?
