Change Number field to Text on User Field

I am trying to modify a custom field in an outlook form but it is set as a
number field that does not accept (-) dashes. So I want to change to text
but it is not letting this happen in the properties (greyed out). Can this
be done?

You would have to remove the field from both the form and the parent folder,
then create a new field with the different data type.
