Can't See program - Start - All Programs

I have a large number of programs installed on my computer. There are so
many that when I go to Start and then All Programs, I can't see all of the
programs. Any ideas how I can either arrange the items to see them all? Is
using subfolders for the programs effective? If so, are there any other
considerations that could cause difficulty in later uninstalling the
program?

Yes, it's an excellent thing to do.

If so, are there any other considerations that could
cause difficulty in later uninstalling the program?

No. These are just shortcuts to the programs, not part of the programs
themselves. Absolute worst case, if you uninstalled a program and a shortcut
to it wasn't automatically removed, you could simply delete it manually.
