When I draw a rectangle around text, I have to Right click the retangle,
Select ORDER, Select Behind text (or I cannot read the text because it is
hidden behind the new rectangle). Can I change a setting so that the normal
behavior of the drawn rectangle is to automatically go behind the text? This
would save me a lot of time!

If the rectangles are basically identical, except for shape/size, you could
save one--completely formatted--as an AutoText entry. Then, insert the
AutoText and adjust the size.

But, I have to wonder why you're using a drawing object rather than the
Borders (and Shading, if need be) feature. That way, you could save that
formatting as a style, and simply apply that style to the text you want
boxed.

To box text using formatting, select the text and choose Format - Borders
and Shading - Borders tab. Choose the border that you want and click OK.

This can word for letters, words, sentences, paragraphs, etc. You can also
save the formatting as a style, then simply select the text you want boxed,
and apply that style.
