Can I eliminate the default setting on an email account?

I am at the beginning of the process of changing email addresses. I have set
up Outlook 2007 to pull in the email from both of my current email addresses
without incident, however; I want Outlook to reply from each email address
accordingly, not strictly from the default account. My old email address is
the current default. Is is possible to have more than one email account in
Outlook 2007 without choosing a default account so that it will reply as I
want from each email address? Is there another way to accomplish this?

Outlook automatically replies and forwards from the account through which the
original message was received. So if you get a message from your new e-mail
account and you reply, the reply will go out through the new e-mail account
as well. You would have to change the replying or forwarding account
manually if you wanted it to go out through your old account.
