Is it safe to edit the OS name between the "" in Startup/Recovery (My
Computer/Properties/Advanced) to make the choice a little simpler to read?

As long as you're only editing the information between the
quotes you should be fine. I've changed the entries to things
like "XP Pro", "XP Home" and "Recovery Console" many times with
no problems.

One thing you might want to do is to backup your current
boot.ini file just in case. Take a look at this article for an
easy way to create a backup copy.

Good luck

Thanks, I was hoping you would say that...as I went ahead and did it
anyway...!
