can I change the display name on a per message basis?

Is it possible to type in what I want for a display name in an e-mail on a
per message basis? I know I can go through the options and change the
display name, but I don't want a different dispay name for all of my
messages, just on ones to certain people, or groups of people.

you'd need to make a second account and choose it when you send the message.
