Can I add text to a field?

I receive many emails that have very similar text in the subject line. Now I
would like to add a column to my Inbox in which I can put a text to define a
specific email. Is this possible?

What about using categories for that? Just use the field choose and add that
field.

that I can just write any text in such a field. Does Outlook (2007) offer
that capability?

You can create more categories, but you will need to use a rule to
assign a category to an e-mail or have to do it manually. Then add the
Category column to your view.

There is no sticky notes feature included in Outlook to append or attach
notes onto an e-mail. You will need to install an add-on to add that
functionality, like with the Notes2 or OutNote Pro add-ons (both are
payware, never used them).
 
You could add more categories, but maybve that's not what you're looking
for. Of course, you may also add a new user-defined field, and add that th
the view: right click on the columns headers of the folder, choose "Field
chooser" (or similar) and create a text type field. Then place it by
dragging with the mouse to the columns headers.

Close the field choose, and rigth click once again on the column headers.
Now choose "Customize View" (or similar), then "Advanced Settings", and
check "In cell editing" (or similar)
