Can "auto complete" emails be saved?

I have relied on the "auto complete" function far too often and therefore,
have far too many valuable email addresses that have not been entered in my
contact list. Is there a way to capture all the "auto complete" emails and
export them to a printable list?

Not natively. You'd need third party software for that.

Why would you want a printed list?
You can save the autocomplete file as a backup.
This is for Outlook 2003 on XP - you need to change some of the locations if
you are using Vista:
