Break up Mirror RAID

I'm interested in a RAID system and have a question that I haven't
been able to read about anywhere.

If I set up a mirror RAID and then (perhaps because my RAID died or I
upgraded motherboard to a non-raid system) I just connected one of the
drives to the regular SATA controller -- would that drive run ok?

Or would I have to find a duplicate motherboard in order to retrieve
my data?

Would you be hooking it up as your boot drive or just a secondary data
drive?

Secondary drive - yes, no problems.
Boot drive - You'll probably have some issues getting Windows going unless
it's an identical MB/chipset.
