Bolding and Centering

I have word 2002 sp3 and am having problems with the bold comand. I bold several headings in the document and want to center my heading but when I block and then click on CENTER the whole document centers. Also when I am bolding I get to a certain position in the document to bold again and when I do the whole document bolds and some of the items I bolded becomes unbolded. This is hard to explain so I hope you understand the problem. It just started happening and I have had service pk 3 for a while now. With this happening I can not customize my document. What could the problem be?

You would do better creating a paragraph style for the headings that bears
the attributes you require.
