autopreview is different from open message. how to see all?

sometimes in outlook 2007 the autopreview (first 3 lines shown in main
outlook window, in the list of messages) is different from the message as
seen in either read pane or when opened into several windows.

where did that different (autopreview) info come from? why can't i see it
when i open the message? seems like there's something in the message that
outlook won't show me, hidden somehow. how to see all of the message?

it's the plain text portion of the message and it’s a trick often used by
spammers so you'll open the message.

so i understand there is a plain text version and the regular version of
email, right? and when i open email i see only the regular version? how do
i see the plain text version? i hate things hidden from me. :)
