Attachments go to " Open WIth, Instead of opening in their format

How can I bypass this step and just have the document open rather than the
extra step of downloading and open with?

When you choose the "Open With," you'll find a box to check called
something like "Always open this type of file with this application,"
and after you check it the correct app should open directly when you
double-click a file with the same extension (.doc/.docx)/.

Whoops -- I just noticed from your heading that you're referring to
email attachments.

NEVER open them directly from email; always save them first (unless
you merely want to see what's in them).
