Archiving email messages into file system folder

I have joined a new company recently. They want to reduce the load on
the exchange servers by offloading messages that were received 30 days
before into a predetermined file system folder (based on the mail box).

I will appreciate any comment on the idea in general, as well as tips
on how to implement it...
