Alternative Spellings

In UK English, words such as 'recognize' can be spelled either with 'ize' or
'ise' endings. The MS Word spellchecker quite correctly accepts both of these.

However, within a single document (or even for a single user) it is clearly
logical to only use one speelling style or the other. Is there a way to get
Word to count the other style (whichever the individual might choose) as a
spelling or other error?

You can add it to an exclusion dictionary (see
http://word.mvps.org/FAQs/General/ExcludeWordFromDic.htm) and load that
dictionary only for the given document, but this isn't really a very
satisfactory solution since you can have only one exclusion dictionary (as
opposed to custom dictionaries, of which you can have as many as you like),
which limits the ability to have specific ones for specific documents. But
if you create one for this purpose (or already have one), you can edit it
through Tools | Options | Spelling & Grammar, so you can add and remove
words as needed.
