With Outlook Express, "From" or "To" addresses were like this : "name of
contact"
In Windows Mail they appear like this "name of contact <[email protected]>"

Is it a way to hide <[email protected]> to come back to the OE appearence ?

That is by design, your recipient does not see that.

Nope. WM shows both the contact name + email address.

The newer Windows Live Mail shows only the contact name, unless the contact
has more than one email address.
